Ingredients
  

  • 1.85 lbs pork meat cubed
  • 2 teaspoons salt
  • ½ teaspoon pepper
  • 1 teaspoon Vegeta seasoning
  • 2 tablespoons oil
  • 2 bay leaves
  • ¼ head yellow onion sliced
  • 1 clove garlic minced
  • 3 tablespoons oil or 1 tablespoon lard
  • 2 yellow onions chopped
  • 2 cloves garlic minced
  • 3 tablespoons sparkling mineral water
  • 2 carrots chopped
  • 1 bell pepper red or Babura, chopped
  • 1 tablespoon tomato paste
  • cups water
  • tablespoons flour
  • 1 teaspoon ground smoked sweet paprika
  • 1 teaspoon Vegeta seasoning
  • 1 teaspoon salt
  • teaspoon pepper

Instructions
 

  • Marinate Meat: Cube the pork and season with salt, pepper, and Vegeta. You can do this one to three days ahead for deeper flavor.
  • Prepare Vegetables: Chop all the veggies finely. This helps them cook down and thicken the stew.
  • Sauté Onions and Garlic: In a deep skillet, heat the oil and sauté the onions and garlic with a pinch of salt until translucent. Add the sparkling mineral water to help the onions break down.
  • Cook Vegetables: Add the rest of the vegetables and sauté for 10-15 minutes, stirring occasionally. Wait until they start to caramelize before adding a small amount of water.
  • Cook Pork: Add the marinated pork and continue to cook on low heat for about 40 minutes, stirring occasionally. Add a little water if needed.
  • Final Seasoning and Thickening: When the pork is tender, add the remaining ingredients. First dissolve the tomato paste and flour in the water, then add it to the stew. Let everything simmer for another 10 minutes.
  • Serve and Enjoy: Serve the stew with your choice of side like pasta, mashed potatoes, or homemade gnocchi.
