Stracciatella Cheese Sandwich with Mortadella

Pistachio pesto
- ½ cup pistachio
- 3 tbsp olive oil
- ½ cup basil leaves
- 1 clove garlic
- 1 pinch salt
- 1 pinch black pepper
Sandwich ingredients
- ¼ ciabatta bread
- 3 tbsp stracciatella cheese
- 3 slices mortadella
- 2 tbsp chopped pistachios
Gather pistachios, olive oil, fresh basil leaves, garlic, and a pinch each of salt and black pepper.
Place all the pesto ingredients into a food processor or Tupperware Chop 'N Prep Chef. Pulse or chop until the mixture reaches a coarse paste consistency. You may need to scrape down the sides and blend a few times to ensure all ingredients are well incorporated.
Slice ¼ of a ciabatta loaf horizontally to open it up for your sandwich base.
Spread a generous layer of the freshly made pistachio pesto on the bottom half of the ciabatta.
Spoon stracciatella cheese over the pesto, spreading it evenly.
Place 3 slices of mortadella on top of the stracciatella cheese.
Sprinkle chopped pistachios over the mortadella for an added crunch.
Close the sandwich with the top half of the ciabatta bread. Press down gently to ensure the ingredients meld together slightly.
