Ingredients
  

  • 1 zucchini
  • 2/3 teaspoon salt
  • 2 tablespoons breadcrumbs about 1 oz
  • 2 tablespoons flour about 1 oz
  • 1 egg
  • 1 tablespoon olive oil

Instructions
 

  • Grate the zucchini and sprinkle with salt. Let it sit for about 10 minutes, then squeeze out as much water as possible.
  • In a bowl, mix the grated zucchini with breadcrumbs, flour, egg, and olive oil until well combined.
  • Preheat your waffle iron and grease it lightly. Scoop the batter onto the waffle iron and close the lid. Cook for about 3 minutes or until the waffles are golden and cooked through.
  • Serve hot with your favorite toppings.
