- 1 zucchini
- 2/3 teaspoon salt
- 2 tablespoons breadcrumbs about 1 oz
- 2 tablespoons flour about 1 oz
- 1 egg
- 1 tablespoon olive oil
Grate the zucchini and sprinkle with salt. Let it sit for about 10 minutes, then squeeze out as much water as possible.
In a bowl, mix the grated zucchini with breadcrumbs, flour, egg, and olive oil until well combined.
Preheat your waffle iron and grease it lightly. Scoop the batter onto the waffle iron and close the lid. Cook for about 3 minutes or until the waffles are golden and cooked through.
