- 10.5 oz purslane
- 2 eggs
- 2 spring onions
- ⅓ cup sweet corn
- 2 tbsp olive oil
- ⅔ tsp salt
Wash the purslane, trim the roots, and dry thoroughly.
Boil eggs for 12 minutes, then cool in cold water, peel, and cut into sixths.
In a large bowl, combine purslane, chopped spring onions, corn, salt, and olive oil. Mix well.
