Oven-Fried Turkey Cutlets with Ham & Cheese

- 650 g turkey cutlets
- 1½ tsp Dijon mustard
- Salt and pepper
- 80 g ham
- 100 g Gouda cheese
- ½ cup all-purpose flour
- 2 eggs
- ⅔ cup breadcrumbs
- 2 tbsp sunflower or olive oil
Season the turkey cutlets with salt and pepper, then spread Dijon mustard over them. Let them marinate for at least 1 hour, or preferably overnight.
Preheat the oven to 350°F. Flatten the turkey cutlets into thin slices. Lay down parchment paper on a flat surface, place the turkey on top, and cover with plastic wrap to keep things tidy.
Heat the oven to 400°F. Line a baking sheet with parchment paper and lightly grease it with oil.
Place ham and cheese on one half of each turkey cutlet, fold the other half over, and secure with toothpicks.
Set up a breading station: one dish with flour, one with whisked eggs, and one with breadcrumbs. Coat each cutlet in flour, then eggs, and finally breadcrumbs.
Lay the cutlets on the prepared baking sheet, spraying them lightly with oil.
Bake for 20 minutes, then flip and increase the oven temperature to 400°F. Bake for an additional 20 minutes until golden and crispy.
Serve with your favorite side dish and don't forget to remove the toothpicks!
