- 1 medium zucchini
- 1 cup cottage cheese
- 2 eggs
- 2 teaspoons of chives
- ½ cup flour
- ½ teaspoon garlic powder
- 1 teaspoon salt
- ⅕ teaspoon pepper
Preheat the oven to 400°F (200 °C) so it can warm up while you prepare the mixture.
Thoroughly wash the zucchini, trim the ends, then grate and salt with half a teaspoon of salt (save the rest of the salt for the mixture). Leave them for 10-30 minutes to release water.
In a small bowl, whisk the eggs. Add cheese, spices, and finely chopped chives and combine.
Gradually mix in the flour.
Finally, incorporate the zucchini that you have drained of water by squeezing it between your palms.
After lining a large baking tray with parchment paper, shape 9 patties.
Place them in the oven for 15 minutes, turn them over and return them for another 15 minutes.
