Ingredients
  

  • 1 medium zucchini about 2 cups shredded, 11 oz
  • 1 medium carrot about ¾ cup shredded, 3.5 oz
  • 1 cup shredded cheddar cheese 3.5 oz
  • 2 large eggs
  • ½ cup breadcrumbs 2.5 oz
  • ½ tsp salt
  • ½ tsp garlic powder
  • Pinch of black pepper

Instructions
 

  • Shred the zucchini, sprinkle with salt, and let sit for 15 minutes. Squeeze out excess water, then mix with remaining ingredients in a large bowl.
  • Form the mixture into 12-15 small tots.
  • Place tots on a parchment-lined baking sheet and bake at 400°F for 25-30 minutes, until golden and crispy.

Notes

Choose firm, green zucchini.
Squeeze the zucchini well to avoid soggy tots.
Store leftovers in the fridge for up to 5 days or freeze for 3 months.
