- 1 medium zucchini about 2 cups shredded, 11 oz
- 1 medium carrot about ¾ cup shredded, 3.5 oz
- 1 cup shredded cheddar cheese 3.5 oz
- 2 large eggs
- ½ cup breadcrumbs 2.5 oz
- ½ tsp salt
- ½ tsp garlic powder
- Pinch of black pepper
Shred the zucchini, sprinkle with salt, and let sit for 15 minutes. Squeeze out excess water, then mix with remaining ingredients in a large bowl.
Form the mixture into 12-15 small tots.
Place tots on a parchment-lined baking sheet and bake at 400°F for 25-30 minutes, until golden and crispy.
Choose firm, green zucchini.
Squeeze the zucchini well to avoid soggy tots.
