For the Chicken:
- 4 chicken drumsticks
- 4 chicken thighs
- 1 tsp salt
- ⅓ tsp black pepper
- 1 tsp all-purpose seasoning
- 1 tsp sweet paprika
- ½ tsp thyme
For the Potatoes:
- 1 tbsp oil
- 1½ pounds potatoes 700 grams
- 1 onion
- 3 garlic cloves
- 1 tsp salt
- ½ tsp all-purpose seasoning
- A pinch of cayenne pepper and black pepper
Separate the drumsticks from the thighs, rinse them, and pat dry with paper towels.
If time permits, season the chicken with the spices listed above a day ahead and refrigerate. If not, you can still season it just before baking—it will still be flavorful.
Preheat the oven to 375°F (190°C).
Peel and slice the potatoes into thin strips, similar to French fries. Slice the onion into strips and cut the garlic cloves in half.
Lightly grease a baking dish with oil and arrange the potatoes, onion, and garlic in the dish. Season the vegetables and toss them together.
Place the seasoned chicken on top of the vegetables, spreading everything evenly in the dish.
Bake in the preheated oven for about 50 minutes, or until the chicken is golden and cooked through, and the potatoes are crispy.
