- 1.1 lbs cauliflower
- 1.4 oz Parmesan cheese
- 2 eggs
- 2 cloves garlic
- 1/2 teaspoon dried basil
- 1 teaspoon oregano
- 1 teaspoon salt
- 1/3 teaspoon pepper
- 4.4 oz mozzarella
- 2.5 oz Gouda cheese
- 1 green onion
Pulse the cauliflower in a food processor or similar chopper until it is finely chopped. Spread it out on a piece of parchment paper and bake for 15 minutes at 425°F.
Allow it to cool slightly, then transfer it to a cloth and squeeze out as much liquid as possible.
Mix the drained, baked cauliflower with Parmesan cheese, eggs, garlic, and spices. Then, spread it out on parchment paper into a rectangle shape. Press down firmly (wet hands help).
Bake this cauliflower base for 10 minutes, then remove from the oven.
Grate the cheeses over the cauliflower and return to the oven. Bake at 425°F for about 10-12 minutes.
Sprinkle chopped green onions, chives, or parsley on top. Enjoy!
