Ingredients
  

  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 garlic cloves minced
  • 14 oz ground pork 400 g
  • 14 oz ground beef 400 g
  • 2 cups tomato passata 500 g
  • cups water 750 ml
  • tsp dried oregano
  • 1 tsp dried basil
  • 1 bay leaf
  • ½ tsp thyme
  • 1 tsp brown sugar
  • 2 tsp salt
  • 1 tsp black pepper
  • 8 oz lasagna noodles broken into pieces (230 g)
  • oz grated Parmesan 40 g
  • 7 oz grated Gouda 200 g
  • 9 oz ricotta cheese 250 g

Instructions
 

  • Heat the olive oil in the Instant Pot on the sauté setting. Add the chopped onion and garlic, cooking for 2-3 minutes until softened.
  • Add the ground pork and beef. Season with salt, and cook for about 5 minutes, stirring occasionally.
  • Stir in the tomato passata, water, herbs, sugar, and broken lasagna noodles. Close the Instant Pot lid and set to cook under pressure for 6 minutes.
  • Once done, let the cooker release the pressure and stir in the Parmesan and Gouda cheese.
  • Serve the soup with a dollop of ricotta on top for extra creaminess. Enjoy!
