- 2 tbsp olive oil
- 1 onion chopped
- 2 garlic cloves minced
- 14 oz ground pork 400 g
- 14 oz ground beef 400 g
- 2 cups tomato passata 500 g
- 3¼ cups water 750 ml
- 1½ tsp dried oregano
- 1 tsp dried basil
- 1 bay leaf
- ½ tsp thyme
- 1 tsp brown sugar
- 2 tsp salt
- 1 tsp black pepper
- 8 oz lasagna noodles broken into pieces (230 g)
- 1½ oz grated Parmesan 40 g
- 7 oz grated Gouda 200 g
- 9 oz ricotta cheese 250 g
Heat the olive oil in the Instant Pot on the sauté setting. Add the chopped onion and garlic, cooking for 2-3 minutes until softened.
Add the ground pork and beef. Season with salt, and cook for about 5 minutes, stirring occasionally.
Stir in the tomato passata, water, herbs, sugar, and broken lasagna noodles. Close the Instant Pot lid and set to cook under pressure for 6 minutes.
Once done, let the cooker release the pressure and stir in the Parmesan and Gouda cheese.
Serve the soup with a dollop of ricotta on top for extra creaminess. Enjoy!
