Ingredients
  

  • 4 eggs
  • 2 tablespoons extra virgin olive oil
  • Juice of 1 small lemon
  • 1/4 teaspoon salt
  • 1/4 cup water

Instructions
 

  • Boil the eggs: Bring water to a boil, salt it, then gently lower the eggs with a spoon. Cook them for exactly 12 minutes.
  • Once cooked, plunge the eggs into ice water, then peel.
  • Combine the peeled eggs and all other ingredients in a blender. Blend until you achieve a smooth and creamy mixture.
  • Use it as a dip, spread, sauce, or add it to salads. I’ve even tried it in coleslaw and burgers!
