  • 1 spoon

Ingredients
  

  • 1/2 cup shredded coconut 40 g, unsweetened
  • 1/2 cup almonds 70 g
  • 4.2 oz dates 120 g
  • 1 tbsp cocoa powder 15 g
  • Pinch of salt
  • 1 tbsp coconut oil
  • 0.7 oz shredded coconut for coating 20 g, unsweetened

Instructions
 

  • Soak dates in hot water for 5 minutes to soften them.
  • In a food processor, grind the almonds until finely chopped.
  • Add the soaked dates, cocoa powder, salt, and coconut oil to the processor. Blend until smooth.
  • Chill the mixture in the fridge for 20 minutes.
  • Roll the mixture into 16–18 balls.
  • Roll each ball in shredded coconut to coat.
  • Store in the fridge until ready to serve. Enjoy!
