- 1/2 cup shredded coconut 40 g, unsweetened
- 1/2 cup almonds 70 g
- 4.2 oz dates 120 g
- 1 tbsp cocoa powder 15 g
- Pinch of salt
- 1 tbsp coconut oil
- 0.7 oz shredded coconut for coating 20 g, unsweetened
Soak dates in hot water for 5 minutes to soften them.
In a food processor, grind the almonds until finely chopped.
Add the soaked dates, cocoa powder, salt, and coconut oil to the processor. Blend until smooth.
Chill the mixture in the fridge for 20 minutes.
Roll the mixture into 16–18 balls.
Roll each ball in shredded coconut to coat.
Store in the fridge until ready to serve. Enjoy!
