Crispy Potatoes From The Oven

Equipment

  • 1 drainer
  • 1 Baking sheet
  • 1 mixing bowl

Ingredients
  

  • 1 pound potatoes
  • 1 teaspoon salt for boiling water
  • 1/2 teaspoon baking soda
  • 4 tablespoons olive oil
  • 1/2 teaspoon oregano
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • Freshly ground black pepper to taste
  • 1 teaspoon chopped parsley

Instructions
 

Prepare the Potatoes:

  • Peel the potatoes and cut them into cubes about 1 inch in size.
  • Avoid cutting them into sticks as they may break easily.

Preheat the Oven:

  • Preheat your oven to 425°F (220°C), using both upper and lower heating elements if available.

Boil the Potatoes:

  • Bring about 6 cups of water to a boil in a large pot.
  • Add 1 teaspoon of salt to the water.
  • Remove the pot from heat, then carefully add the 1/2 teaspoon of baking soda. Be cautious as it may fizz.
  • Return the pot to the heat and gently add the potato cubes.
  • Boil the potatoes for 10 minutes. They should be tender enough for a knife to pass through easily.
  • In a small bowl, combine olive oil, oregano, rosemary, garlic powder, 1/2 teaspoon of salt, and freshly ground black pepper.
  • Mix well to create the seasoning mixture.
  • Drain the boiled potatoes and return them to the pot.
  • Pour the seasoning mixture over the potatoes.
  • Gently toss to coat all the potato pieces without breaking them.

Bake the Potatoes:

  • Line a baking sheet with parchment paper.
  • Spread the potatoes out on the baking sheet, ensuring there's space around each piece for even cooking.
  • Bake in the preheated oven for 20 minutes.
  • After 20 minutes, carefully flip each potato piece.
  • Return them to the oven and bake for another 20 minutes until they're golden brown and crispy.

Finish and Serve:

  • Remove the potatoes from the oven.
  • Sprinkle chopped parsley over them.
  • Serve hot with your favorite dipping sauce. Enjoy!

Notes

Fresh Garlic Option: You can replace the garlic powder with fresh minced garlic for a stronger flavor.
