- ½ cauliflower about 7 ounces
- 1 broccoli about 13.5 ounces
- 2 tablespoons oil
- 1 onion
- 2 carrots
- Small piece of celeriac
- 6 cups water
- 2 teaspoons salt
- 1 pinch pepper
- 7 ounces heavy cream
Heat oil in a pot and add chopped onion. The onion doesn't need to be finely chopped as you will blend it later. Lightly salt it to start the softening process.
Add chopped carrots and celery. If needed, add a little water and sauté for about 10 minutes.
Add the chopped broccoli and cauliflower to the pot.
Pour in boiling water, add salt and a bit of pepper, and cook for another 15-20 minutes until the vegetables are tender.
Turn off the heat and stir in the heavy cream.
Use an immersion blender to blend everything until creamy. Serve warm and enjoy a cozy, delicious meal!
