- 1.1 pounds asparagus trimmed and chopped into ½ inch pieces
- 2 tablespoons olive oil
- 3 cloves garlic minced
- 1 ¾ cups light cream
- ⅔ teaspoon salt
- Fresh ground pepper to taste
- ½ lemon Juice and zest
- 10.5 ounces pasta
Heat olive oil in a deep skillet over low heat. Add minced garlic and sauté until golden, about 1-2 minutes—be careful not to let it brown too quickly.
Increase heat to medium, add asparagus, season with salt and pepper, and sauté for about 5 minutes.
Meanwhile, cook pasta in a pot of salted boiling water according to package directions.
To the skillet, add cooking cream, lemon juice, and zest. Cook over low heat for another 5 minutes until slightly thickened.
Drain pasta and mix it into the asparagus and cream sauce. Serve warm.
