10 muffin paper liners
- 8 oz cottage cheese 230 g
- 2 eggs
- 2 tbsp honey 30 g
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1/4 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 1/4 cups oats (120 g)
- 3 oz dark chocolate chopped or use chocolate chips (80 g)
Preheat the oven to 375°F (190°C).
Blend all ingredients except the dark chocolate until smooth. Chop the chocolate finely, then fold it into the batter, reserving some for topping.
Divide the batter into 10–11 muffin cups, filling each evenly.
Bake for 25–27 minutes, then let the muffins cool slightly before serving. Enjoy!
