Cheesy Crispy Potato Pancakes

Ingredients
  

  • 21 oz potatoes
  • teaspoon salt
  • 1 teaspoon salt (for the water)
  • 1 tablespoon sugar
  • 1.75 oz cornstarch
  • 4.4 oz mozzarella cheese
  • Oil for frying

Instructions
 

  • Boil the potato cubes in salted water for about 20 minutes.
  • Drain and mash the potatoes, then add the salt and sugar.
  • Let the mixture cool, then stir in the cornstarch.
  • Lightly oil your hands and form about 6 potato pancakes, filling each with cheese. Seal them well to prevent the cheese from leaking out.
  • Fry in oil over medium heat, a few minutes on each side. Enjoy!
