Pizza Dough
- 1 pound cauliflower (1 whole cauliflower)
- 1 egg
- 1.5 ounces grated Parmesan cheese
- 1 teaspoon dried herbs oregano, thyme, basil
- ¼ teaspoon salt
- 2.5 ounces cream cheese or cottage cheese
Sauce
- 8.8 ounces tomato passata
- ½ teaspoon salt
- Pepper to taste
- 1 tablespoon olive oil
- 2 teaspoons dried oregano
Toppings
- 2.5 ounces mushrooms sliced
- 2.5 ounces chicken salami sliced
- 3.2 ounces Gouda cheese shredded
- A few fresh basil leaves
Preparing the Dough
Preheat the oven to 425°F (220°C).
Rinse and chop the cauliflower into florets, then pulse in a food processor until it resembles grains of rice.
Spread the cauliflower on a parchment-lined baking sheet and bake for 15 minutes.
Allow to cool, then transfer to a kitchen towel and squeeze out as much water as possible.
Combine the drained cauliflower with egg, Parmesan, dried herbs, salt, and cream cheese. Mix well.
With damp hands, form the mixture into a circle about ½ inch thick on the parchment paper.
Bake in the preheated oven for 15-20 minutes until set and starting to brown.
Preparing the Toppings
While the crust bakes, mix tomato passata with olive oil, salt, pepper, and oregano.
Remove the crust from the oven, spread the sauce evenly over the top, then add cheese, chicken salami, and mushrooms.
Return to the oven and bake for about 8 minutes, or until the cheese is melted and bubbly.
Garnish with fresh basil leaves before serving.
