Peel and dice the potatoes into cubes. Boil them in lightly salted water for about 25-30 minutes until tender.
While the potatoes are cooking, wash and chop the broccoli into smaller pieces, including both florets and stalks. Steam the broccoli for 4-5 minutes until slightly softened.
Dice the Gouda cheese into small cubes.
Preheat your oven to 400°F while you shape the cups.
Once cooked, drain the potatoes and mash them using a potato masher or fork until smooth.
In a large bowl, combine the mashed potatoes with the egg, sour cream, cream cheese with chives, salt, and pepper. Mix well.
Gently fold in the steamed broccoli, being careful not to break it apart too much.

Place the cups in the preheated oven and bake for 25 minutes with the fan on. If your oven doesn’t have a fan, bake at 410°F instead.
