Broccoli Potato Cups Recipe

  • 1 Baking sheet
  • 1 medium-sized pot
  • 1 Sharp Knife
  • 1 Cutting Board
  • 1 mixing bowl

Ingredients
  

  • 700 g potatoes
  • ½ broccoli about 200 g
  • 200 g Gouda cheese
  • 1 egg
  • 2 tablespoons sour cream
  • 100 g cream cheese with chives
  • ½ teaspoon salt
  • A pinch of pepper

Instructions
 

  • Peel and dice the potatoes into cubes. Boil them in lightly salted water for about 25-30 minutes until tender.
  • While the potatoes are cooking, wash and chop the broccoli into smaller pieces, including both florets and stalks. Steam the broccoli for 4-5 minutes until slightly softened.
  • Dice the Gouda cheese into small cubes.
  • Preheat your oven to 400°F while you shape the cups.
  • Once cooked, drain the potatoes and mash them using a potato masher or fork until smooth.
  • In a large bowl, combine the mashed potatoes with the egg, sour cream, cream cheese with chives, salt, and pepper. Mix well.
  • Gently fold in the steamed broccoli, being careful not to break it apart too much.
  • Line a baking sheet with parchment paper and lightly oil it. Using a mold of your choice (like a muffin tin or silicone mold), shape the mixture into 9 oval-shaped cups.
  • Place the cups in the preheated oven and bake for 25 minutes with the fan on. If your oven doesn’t have a fan, bake at 410°F instead.
