For the Crepes:
- 2 eggs
- 3/4 cup milk
- 3/4 cup carbonated water
- 1/3 teaspoon salt
- 1/2 teaspoon sugar
- 1 2/3 cups flour
- 2 tablespoons oil
For the Filling:
- 2 tablespoons oil
- 1 yellow onion chopped
- 1 red bell pepper chopped
- 14 ounces canned chopped tomatoes
- 1 1/10 pounds ground turkey
- Salt pepper, oregano, sugar, garlic powder to taste
For Breading:
- 4 ounces cheese sliced or grated
- 2 eggs beaten
- Flour and breadcrumbs for coating
- A little oil for spraying
Make the Crepes:
Combine eggs, milk, carbonated water, salt, sugar, flour, and oil in a bowl. Whisk until smooth and cook thin crepes in a non-stick skillet.
Prepare the Filling:
Heat oil in a pan, sauté onion until translucent, add bell pepper, then tomatoes and spices. Let it simmer until most of the liquid has evaporated.
Add the ground turkey and cook for another 5-8 minutes on medium-high heat until thoroughly cooked.
Assemble and Bake:
Fill each crepe with the turkey mixture and cheese, roll up tightly.
Dip each rolled crepe in flour, then beaten eggs, and coat with breadcrumbs.
Arrange on a greased baking sheet, lightly spray with oil, and bake at 400°F for 15-20 minutes until crispy and golden.
