Ingredients
  

For the Crepes:

  • 2 eggs
  • 3/4 cup milk
  • 3/4 cup carbonated water
  • 1/3 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 2/3 cups flour
  • 2 tablespoons oil

For the Filling:

  • 2 tablespoons oil
  • 1 yellow onion chopped
  • 1 red bell pepper chopped
  • 14 ounces canned chopped tomatoes
  • 1 1/10 pounds ground turkey
  • Salt pepper, oregano, sugar, garlic powder to taste

For Breading:

  • 4 ounces cheese sliced or grated
  • 2 eggs beaten
  • Flour and breadcrumbs for coating
  • A little oil for spraying

Instructions
 

Make the Crepes:

  • Combine eggs, milk, carbonated water, salt, sugar, flour, and oil in a bowl. Whisk until smooth and cook thin crepes in a non-stick skillet.

Prepare the Filling:

  • Heat oil in a pan, sauté onion until translucent, add bell pepper, then tomatoes and spices. Let it simmer until most of the liquid has evaporated.
  • Add the ground turkey and cook for another 5-8 minutes on medium-high heat until thoroughly cooked.

Assemble and Bake:

  • Fill each crepe with the turkey mixture and cheese, roll up tightly.
  • Dip each rolled crepe in flour, then beaten eggs, and coat with breadcrumbs.
  • Arrange on a greased baking sheet, lightly spray with oil, and bake at 400°F for 15-20 minutes until crispy and golden.
