- 2 cans red beans drained (about 920 g drained weight)
- 2 tbsp oil
- 1 yellow onion chopped
- 2 carrots sliced
- 1 red bell pepper chopped
- 4 sausages
- 1.8 oz bacon 50 g
- ⅔ tsp salt
- 1 tsp chili powder
- ⅕ tsp black pepper
- 1 tsp chopped parsley
- ½ tsp smoked paprika
- 2 tbsp roasted red pepper paste
- 2 cups tomato passata 500 ml
Finely chop the onion, slice the carrots into rounds, and chop the red bell pepper into cubes.
Heat the oil in a skillet over medium heat and sauté the chopped onion until translucent. Add the carrots and bell pepper, cooking for about 10 minutes until softened. Add a little water if necessary to prevent burning.
Preheat the oven to 375°F (190°C).
While the vegetables are cooking, drain and rinse the beans, slice the sausages into rounds, and chop the bacon into small pieces. Add these to a deep baking dish.
Add the chopped parsley, red pepper paste, seasonings, tomato passata, and sautéed vegetables to the baking dish. Mix everything together well.
Bake in the preheated oven for 35 minutes, or until the surface is golden and slightly caramelized.
Serve warm and enjoy!
