1 meat mallet
- 6 chicken cutlets
- Salt, pepper, garlic powder, oregano (for seasoning the chicken)
- 3.5 oz herb cream cheese
- 6 slices cooked ham
- 6 slices cheese like Edamer or Gouda
- 3.5 oz bacon thinly sliced
Start by heating your oven to 400°F. This ensures it’s ready by the time you've prepped your roll ups.
Season the chicken cutlets with salt, pepper, garlic powder, and oregano. Then, gently pound them between two pieces of plastic wrap to even out the thickness.
Spread herb cream cheese over each cutlet. Top with a slice of ham and a slice of cheese, then carefully roll them up.
Wrap each chicken roll with bacon and secure with a toothpick at the bottom.
Place the roll ups on a parchment-lined baking sheet. Cover lightly with aluminum foil to prevent burning and retain moisture. Bake covered for 20 minutes, then remove the foil and bake for an additional 20-25 minutes until golden and crispy.
